RAKIA

Rakia ( cyr. Ракия ) is considered to be the national drink in Bulgaria and all the other Slavic Balkan nations. It has a very high alcohol content and is made by distillation of fermented fruits like plums, grapes, apples, quinces and other. Most people in rural areas make Rakia at home, therefore it’s alcohol content can reach 60% or more. It’s usually consumed with shopska salad, pickles, turshia. The Rakia is often compared to brandy and vodka.

KITCHEN

Bulgarian kitchen is simple, tasty, healthy, rich in fruits and vegetable. In early summer a lot of water-melons are all around streets, parks. In autumn they are replaced by pumpkins and later by cabbage. Bulgarian are very proud of their crops. It is just enough to try tomatoes to know why.

CUISINE

The variety in Bulgarian cuisine is based on the long history of the country, as well as on the long-lasting migrations of the tribes that founded Bulgaria more than 1300 years ago. The close contact with Turkey and Greece have helped us form very attractive and to some extent exotic national cuisine, including some dishes which cannot be called national but which are typical of Bulgaria only.
Gourmets have long since esteemed the merits of Bulgarian cuisine with the verdict that it is tasty, spicy and varied, appealing to one and all. Indeed, who would not like the abundance of fresh vegetables and fruits, juicy meat, grilled or served with piquant sauces, mouth-watering vegetarian dishes, simmered slowly on low heat, the banitsa ( cheese pie) which simply melts in your mouth, and famous Bulgarian yogurt?

-Ovtcharska  Salad -  a ham– and– olives salad with sheep‘s milkcheese
-Shopska   Salad -  a tomatoe– pepper– and cucumber salad with sheep‘s milkcheese
-Kebaptche  -  minced meat rolls seasoned with traditional spices and barbecued

-Sirene  po Thrakiyski -  like Sirene po Shopski but with lukanka
-Kachamak -  boiled and long stired corn flour, butter, cheese and pepper

-Baklava  -  sweet pastry made of chopped nuts, layers of thin cake and honey syroup
-Banitsa  -  a delicious strudel– like pastry made with spinach or feta cheese filling

Wine


Wine is one of the most  famous drinks all over the world. Throughout the Bulgarian lands wine has been produced for more than 5 thousand years.
According to some educational guesses the Thracians were  the first who started growing grape and making wine from it. We find information in the  poems of Homer - the "Iliad" and "Odyssey", where the ancient autor talks about the tribes, inhabiting Bulgaria by that time, about their wonderful wine and their worship to the god Dyonissios as he was considered to be the patron of viticulture and wine-producing.
The best kinds of red wine are tasty and strong, a lot of white wine has different pleasant smell. Among native types of grape-vine, both quality and Mount, the first place take Gamsa, Mavrud, Pamid, Dimiat and Misket. As an example of dessert wine can be Mavrud from Asenovgrad.Mavrud is the highest-quality wine produced in Bulgaria, and these small, thick-skinned grapes provide robust flavor and plenty of tannin, which facilitate long-term aging.

Celebrations and Festivals

The Bulgarian system of celebrations and rituals bears the mark of diverse historical strata. It contains elements of totems, animism, pantheism and monism, including dances and rites, which have been gathered over millenia. Many of the traditional celebrations are widely honoured, partially being preserved in different villages and regions, but some are retained only as tourist attractions.

Festivals

March
1. March - every year  the Bulgarians give each other 'martenitsas' - small figures made of white and red threads, a symbol of the awakening, of spring, health and happiness. These woolen yarn are also placed on pets, farm animals and fruit trees.
Beginning of March - Mummer’s Celebration ( Kukeri )- an ancient popular customs. Dressed in colourful costume men with masks on their heads, perform ritual dances with which they protect the stockmen and men of agriculture from evil spirits.
Lazarus’ Day - eight days before Easter, the young, beautiful and eligible women of Bulgaria celebrate St Lazar's Day with ritual songs and dances, learnt by the young girls during Lent.

May
6. May - St. George‘s Day– the shepards‘ celebration; The Day of Bulgarian Army
Every second year, in Gabrovo, a Festival of Humour and Satire takes place, comprising masked actors, folk music, animated cartoons and the giving of prizes.

21. May - Saints Constantine and Elena Day -Nestinarstvo, or fire dancing; practitioners walk barefoot on hot coals in small rural villages in the Strandzha mountains (or increasingly in tourist resorts) in this pagan event marking the arrival of summer. It is believed the ritual is descended from Dionysian rites practiced by ancient Thracians.


June
Rose Celabration. This original celebration is at the time of the flowering of the oil bearing roses, cultivated in the so-called Rose Valley, near the town of Kazanlak /central Bulgaria/. At dawn girls and boys dressed in national costumes, first begin the picking of the rose petals, from which the rose oil is made. The ritual is accompanied by folk songs, dances and merry making.
